- Arriving home earlier than usual and finding the sun dappling through the trees breathtaking.- Making my "dish" - eggplant parmesan - for friends. One friend keeps me company in the kitchen and, as I tend to get a little distracted, saves me from forgetting to put the second layer of eggplant in. :)
- Starting a book that my urban book club selected, "The Power of One" by Bryce Courtenay and getting sucked in with the first line, "This is what happened."

That is such a lovely scene like so many that capture our breath this time of year. What camera do you use to catch all these wonderful shots?
There was a little cafe in Pryor, OK called Iggy's. They made the most wonderful Eggplant Parmesan and I enjoyed going there in 1965. Wonder if it still exists?
Who would think such a line would grab one's attention but it certainly does. Regardless of the story we all want to eventually know "what happened".

Thank you! It's a Canon digital camera - I keep it in my purse all the time so I can snap things that catch my attention. The model is PowerShot SD1100 IS.
It might be fun for you to go back to Pryor,OK and find out! My recipe came from Cooking Light magazine - it got all thumbs up. :)
Apparently a lot happens in this book - it's more than 500 pages. I have until mid-December to finish though.

Such a gorgeous tree. My fam will NOT let me make eggplant parm one more time. I made it every week this summer. Bumper eggplant summer. :) Oh, a book club. I'd love to be in a book club, but for now, I'm going to RELISH my new Bible study. Joy.

Great, vibrant, Maple Tree colors pic! It's been a year since my last eggplant- Do you fry yours in bread crumbs n olive oil first or just put in fresh? That line is a great hook. Tell us how you like the book when it's done.

My recipe calls for dipping eggplant slices in an egg wash, and then whole wheat panko crumbs. You bake them for 30 minutes and then they are layered in with the sauce and cheese.
