Good mood food, stacked perfectly and in they go

- The July edition of Cooking Light magazine has a "Healthy Living / Good Mood Food" feature called "Don't Worry, Eat Happy."  I liked this suggestion for a fast and easy lunch salad:  Baby spinach, drained and rinsed canned chickpeas, onions (I used sweet Vidalia), red peppers, and feta cheese, tossed with my favorite vinaigrette.  "Low levels of Folate and other B vitamins have been linked to depression, and greens and beans are top sources.  This simple combination supplies more than your daily 400mcg recommendation for folate."  And it was tasty.

- While I was out one day, a coworker (also a good friend) subbed for me.  And when I came back, my desk was beyond tidy, with even the postit notes stacked perfectly.

- This has no other significance other than that it has been hanging out on my desktop for weeks (so long I don't remember where it came from.)  But it's a great use for shipping boxes and all those who love, or have loved cats, can relate.  :)

My last dear cat "Sweetie", had absolutely no interest in boxes, at all. The only car I ever had that didn't just love them!

Thank you - I'm having it again as we speak (or write.) :)

When I was out of the country once, my friend Steven came by every day to look in on my cats and decided to tidy and vacuum for me and threw out one of my cats' boxes they liked to play in. I was so chagrined - I told him I left it out on purpose. But I did appreciate the cleaning. :)

Laughed out loud at the cat traps. Guaranteed those are the perfect way to trap them. Missy is a box fanatic...Stripey is addicted to anything that resembles a bag. He doesn't care if there is lumpy stuff in it or hard stuff, he's going to get in it and make himself at home! :)

And the cat traps would work in this house. Very, very well. Though we once had a cat who liked to put his toy of the day into a box when he had finished playing with it (his only tidy instinct).

And here I am not knowing what folate is! If you soak and then cook the chick peas at home, they are so much yummier...I did that and made hummus and falafels tonight. Yum yum!

I do them that way when I have time, but this is a quick way to do it. I like to make hummus, too.

The salad looks yummy. I miss chewing- n need to shred salad things now- so trying to picture it shredded! Some folks are neat to a fault. That tends to drive me crazy... The cats in boxes thing is very amusing! If there's only one box n many cats, look out!

Hi Lynn - the salad looks delicious .. and happy food - I had some gazpacho this week and remembered how much I loved it - I might make myself some I think!!

And that sure is cats doing what cats love to do!
