E is for Easter Lilies, Easter Eggs and Egyptian Edamame Stew

- This beauty opened up right on schedule and now graces the graves of my parents at the veterans' cemetery in my home town - placed Tuesday morning while I was there for family business.

- A favorite Easter treat - Cadbury creme eggs.  I get nothing from Cadbury for promoting their eggs - I just love them and it's a good E thing.  :)

Egyptian Edamame Stew

This is so good and your home will smell wonderful for hours.

1 1/2 10-ounce packages frozen shelled edamame (about 3 cups), thawed
1 tablespoon extra-virgin olive oil
1 large sweet onion, chopped
1 large zucchini, cut into half moons
2 tablespoons minced garlic
2 teaspoons ground cumin
1 teaspoon ground coriander
1/8 teaspoon cayenne pepper, or to taste
1 28-ounce can diced tomatoes
1/4 cup chopped fresh cilantro
3 tablespoons lemon juice

1. Bring a large saucepan of water to a boil. Add edamame and cook until tender, 4 to 5 minutes or according to package directions. Drain. (Or you can steam them.)
2. Heat oil in a large saucepan over medium heat. Add onion and cook, covered, stirring occasionally, until starting to soften, about 3 minutes. Add zucchini and cook, covered, until the onions are starting to brown, about 3 minutes more. Add garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds. Stir in tomatoes and bring to a boil; reduce heat to a simmer and cook until slightly reduced, about 5 minutes.
3. Stir in the edamame and cook until heated through, about 2 minutes more. Remove from the heat and stir in cilantro and lemon juice.

Makes 4 servings, about 2 cups each. Per serving: 258 calories.

I serve this with saffron rice. Yum.

I absolutely love Easter Lillies... we are selling them where I work and they are lined up beside the cash registers - they are so beautiful and make the dusty Canadian Tire smell wonderful.

And creme eggs... I don't think I have ever gone a year without them, after age five!

Beautiful Easter Lily- Glad you got to visit the cemetary. At my Parents gravesite we're not allowed to leave anything, even flowers! I got a Cadbury egg to open on Easter- they were 50 cents!
You are such a cook cook! I had to look up "Edamame" looks good- I'd probably like it, because it's a type of bean.

The veterans' cemetery has strict rules, but when I got the notice that their marker was up, there was a notice that potted plants for Easter were allowed 10 days before and 10 days after Easter.

Edamame is a state of soy bean I have never knowingly eaten.

I have never had luck getting an Easter lily to bloom on time. This is wonderful. Never had a cadbury cream egg, nor edamame. I have lived a sheltered, sad life. I need to try both soon.

Hi Lynn .. love the Easter lily - beautiful photo and so pleased you got 'home' to place some on your parents' grave ..

Now those creme eggs - I hate - I do not know why .. but they are just to me horrible - I'll scoff the others!

The Edamame stew looks good .. I sometimes have them raw in a salad I buy at Marks and Spencer ..

I know you said you were trying to eat more healthily - this stew would fit the bill for that, but if you want a treat - run down to your local pharmacy, where the eggs are sure to be waiting in a pile at the checkout. :)

I think it's one of those diet stews, but it doesn't taste like it - hence the calories at the end anyway.

Same reason we don't use real green boughs at our church at Christmas - too many allergy related complaints. :)

Love your blog and I love the variety of your A to Z post. The stew looks like a must try for me. Not so much a Cadbury fan. I like the chocolate but the cream in the middle made me sick once and now I can't abide it. My husband like this because I give him and eggs I get.

HaHa. I noticed most people who commented were "tasting" the chocolate egg. But I "tasted" or "smelled" what you had to say about the stew. I copy pasted it and plan to try it out immediately. It sounds so nutritious.
