- This beauty opened up right on schedule and now graces the graves of my parents at the veterans' cemetery in my home town - placed Tuesday morning while I was there for family business.
Egyptian Edamame Stew
This is so good and your home will smell wonderful for hours.
1 1/2 10-ounce packages frozen shelled edamame (about 3 cups), thawed
1 tablespoon extra-virgin olive oil
1 large sweet onion, chopped
1 large zucchini, cut into half moons
2 tablespoons minced garlic
2 teaspoons ground cumin
1 teaspoon ground coriander
1/8 teaspoon cayenne pepper, or to taste
1 28-ounce can diced tomatoes
1/4 cup chopped fresh cilantro
3 tablespoons lemon juice
1. Bring a large saucepan of water to a boil. Add edamame and cook until tender, 4 to 5 minutes or according to package directions. Drain. (Or you can steam them.)
2. Heat oil in a large saucepan over medium heat. Add onion and cook, covered, stirring occasionally, until starting to soften, about 3 minutes. Add zucchini and cook, covered, until the onions are starting to brown, about 3 minutes more. Add garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds. Stir in tomatoes and bring to a boil; reduce heat to a simmer and cook until slightly reduced, about 5 minutes.
3. Stir in the edamame and cook until heated through, about 2 minutes more. Remove from the heat and stir in cilantro and lemon juice.
Makes 4 servings, about 2 cups each. Per serving: 258 calories.
I serve this with saffron rice. Yum.

I absolutely love Easter Lillies... we are selling them where I work and they are lined up beside the cash registers - they are so beautiful and make the dusty Canadian Tire smell wonderful.
And creme eggs... I don't think I have ever gone a year without them, after age five!

Beautiful Easter Lily- Glad you got to visit the cemetary. At my Parents gravesite we're not allowed to leave anything, even flowers! I got a Cadbury egg to open on Easter- they were 50 cents!
You are such a cook cook! I had to look up "Edamame" looks good- I'd probably like it, because it's a type of bean.
lol GOOD cook!
Hmm I love creme eggs, but as I'm trying to watch my weight, I'm avoiding them!
The flower is beautiful. :)
happy Spring post!

Easter Lilies are a joy. And scent the air around them so well. And Edamane anything is good. That would be a wonderful way of serving them. Thanks.
T'Laina -
I agree - my car smelled so good with the lilies sitting next to me in the passenger seat.
Here's a creme egg to you! I'll stop by your blog shortly.
Snaggle -
The veterans' cemetery has strict rules, but when I got the notice that their marker was up, there was a notice that potted plants for Easter were allowed 10 days before and 10 days after Easter.
Here's a creme egg to you, too!
That is a good hearty recipe - delicious, too. Let me know if you try it. I get the edamame in the frozen food section.

Thank you - it was a beautiful morning and the flower cooperated.

You were just here - yes, a lovely scent.
Hope you are doing well today.
Easter Lillies are beautiful.
Eggs of any sort please me. Cadbury creme eggs maybe more than some:)
Edamame is a state of soy bean I have never knowingly eaten.
The stew looks so wonderfully healthy. I noticed you posted the chocolates first and then the stew...
We love those eggs too!
I have never had luck getting an Easter lily to bloom on time. This is wonderful. Never had a cadbury cream egg, nor edamame. I have lived a sheltered, sad life. I need to try both soon.
Not fair! I can't Cadbury's creme eggs where I live. Still, I can drool over your picture instead. Love sound of the recipe - and you put the calories at the end!
That soup sounds like something I need to try and I love lilies outside, inside the give me a headache and I am thankful we've gone to silk lilies at church.
The stew looks delicious, and not even that hard to make. Nice Easter post!
Egyptian Edamame Stew - that's new to me!
Hope you're having fun with the Challenge. Happy Easter!
YUM!!! And now I'm hungry ... mostly craving a creme egg! haha.
Ooooohhh, that stew looks good!
Unusual.
Your stew looks good.
I can't wait to eat my Cadbury Creme Egg on Sunday morning.
Hi Lynn .. love the Easter lily - beautiful photo and so pleased you got 'home' to place some on your parents' grave ..
Now those creme eggs - I hate - I do not know why .. but they are just to me horrible - I'll scoff the others!
The Edamame stew looks good .. I sometimes have them raw in a salad I buy at Marks and Spencer ..
Cheers Hilary
Wonderful post. The stew looks amazing! Thanks for sharing.
Why is every blog enticing me with eats today??!! :)
Yes, I have always LOVED those Cadbury eggs. Were they bigger when I was a kid? Or just got smaller looking as I got bigger?? :)
Beautiful lily. I got one just like that as my birthday gift.
xoxo
Granny Annie -
Let me know if you try edamame beans - they are one of those super foods I keep reading about.
Leonora -
Yes - everything in its proper order. :) The stew incorporated some badly needed E subject.

I know you said you were trying to eat more healthily - this stew would fit the bill for that, but if you want a treat - run down to your local pharmacy, where the eggs are sure to be waiting in a pile at the checkout. :)
Susan -
I think it's one of those diet stews, but it doesn't taste like it - hence the calories at the end anyway.
Sage -
Same reason we don't use real green boughs at our church at Christmas - too many allergy related complaints. :)
Karen -
It's very easy to make.
Alex -
I might have hit upon the one E thing with that stew that no one else posted about.
I am having fun with the challenge. :)
Margo -
I like to buy those and spread them around there and there for good cheer.
lg -
That would work for your household, I think. Let me know if you try it.

Happy Easter!

Thank you - and I hope you had a good birthday.

Love your blog and I love the variety of your A to Z post. The stew looks like a must try for me. Not so much a Cadbury fan. I like the chocolate but the cream in the middle made me sick once and now I can't abide it. My husband like this because I give him and eggs I get.
I look forward to reading more!
I can almost smell that stew - wonderful!
Aloha Lynn,
Thanks for stopping by and leaving a comment.
I *love* Cadbury's Eggs, too, but can only eat one a year :)
Great posts and I'm a new follower:)
Beautiful flower!
I love edamame; this sounds like a great recipe.

Yum is right! Did I read it correctly that it's vegetarian?

Let me know if you try it - it's one of my favorites and I like taking leftovers for lunch.

Yes - and vegan, in fact. :)
HaHa. I noticed most people who commented were "tasting" the chocolate egg. But I "tasted" or "smelled" what you had to say about the stew. I copy pasted it and plan to try it out immediately. It sounds so nutritious.
